Ingredients in Keto Cupcakes
These cupcakes are made with a blend of low-carb flours, including coconut flour, almond flour, and flaxseed meal. For keto baking, I like to use almond flour that has been blanched to remove the almond skins, and ground very finely.
Beside above, what makes a cupcake light and fluffy?
The gluten and fat molecules in the batter are what helps the cupcake set and maintain its fluffy, light structure – give those molecules awhile (at least 2/3 of the total baking time) to set and stiffen up before you introduce any cold air to the atmosphere by sticking your nose in to check on things.

For this test I took the exact control recipe but baked it in a 325°F oven for 22 minutes. I peeked through the oven window to watch these cupcakes as they baked and they domed up surprisingly high during baking but proceeded to collapse slightly during the last minutes of baking and during cooling.
If cakes are peaking during baking it is usually because the oven temperature is a bit too high. The outside edges of the cakes bake quickly, forcing the centre upwards and into a peak. As ovens vary you may find that you need to turn your oven down a little more, especially if it is a fan oven with a strong fan.
The trick to perfect consistently shaped cupcakes is an ice cream scoop. We use a 3 tablespoon scoop which fills the cupcake liners 2/3 full which is the perfect amount of batter for each cupcake. Too little batter (liners 1/2 filled) and the cupcakes won’t rise over the edge of the cupcake liner.
Those who follow ketogenic diet often refer to heavy whipping cream as HWC. It’s used in many keto recipes, including soups and sauces, because it’s ultra-low in carbohydrates. They also HWC in coffees and lattes in place of milk.
Some more sugary menu items on the McDonald’s menu are the ice creams and milkshakes – those are another no-go. Lastly, you’ll want to stay away from the sugar-free coffee options. They may be sugar-free, but they aren’t carb-free.
